Do you folks have any good counters / counter takedowns against a single leg (other then feed hip & sprawl then cross face etc)? For example, how likely is Judo's uchimata / harai-goshi to work against a single leg that starts low (beneath knee), then ends high? Would some variation of a rolling knee-bar also be possible in this siuation?
Descriptions would be great.

You could roll into a kneebar, or omo plata. Also, you can just 'cave into' it and roll over with it, like a rice bag reversal.

Most of these counters won't work too well against solid shooters.
The primary thing that most guys use against singles is the kimura.
The reason why you won't get omo plata much or armlocks is because of the mechanics of most single leg takedowns.
Guys will usually go to the outside of the single, not to the inside and try to take your leg across their body. Your best bet is the sprawl and crossface or just dropping to guard. There are some more exotic standing moves like the lateral drop and such, but these aren't as high-percentage.
